You are in "Compact View" mode. You can reset this by clicking "View" and then "Default View".
Alternative, rather than using the mouse, you can type "alt-v" then "d".
Sorry, but I can't find out anything about why your "Remove from Contacts" dialogue isn't showing up. You should just be able to right click on the contact name, and then select "Remove from Contacts" at the bottom, even for 900 Facebook contacts http://community.skype.com/t5/Windows-desktop-client/Removing-Facebook-contacts-from-Skype/td-p/431467
