I just bought Samsung Galaxy S II i9100 and when I post on Facebook, it just shows, "via mobile". Is it possible for it to be showing "via Samsung Galaxy S II"

I don't think you can as Android is a mobile operating system and websites detect your OS as that.
You can TRY to disable mobile view in your browser settings (assuming your using your browser and not the app). Doing this will trick the website to think your viewing from a desktop. But, like I said, Android is for mobile so it might still show up as so.

Don't think so. Should of gotten an iPhone. So I can say via iPhone.

Well, it is facebook itself problem. It cant detect which phone we use. I've checked my friend mobile upload using iphone, it is the same as other Android apps. -via Mobile instead of via android or iphone or blacberry.
However, you can try this apps "Status Via" from android market.
