I have facbook and I set the privacy setting to only friends. I have disable to search option. Now, I would like to play games on facebook and use some application such as monster quiz. When I sign up for these, would my account and information be searchable by other members.

No but your account and access to your account will be granted to the game itself.

If you are concerned about privacy, I don't recommend enabling ANY facebook application. bar none. They all have access to your account information to some degree.

As far as other users that you may specifically want to remain private from, every app will expose you to a different degree. But no, just enabling an app should not make your account searchable, if by that you mean someone being able to type your name in and click "add as friend"

If that person uses that app, and the app is an honest app, then anything about you should be posted anonymously on the app - like it will say "facebook user" instead of your name.

But each app has privacy settings apart from the general facebook privacy settings. Make sure you check the default settings after you add the app and uncheck whatever it lets you prevent it from sharing.
