The fact that we know they're called Dinosaurs (plus their specific names like T-Rex and Brontosaurus) means we humans must have mingled with them.

Could be because we named them. Some dinosaurs are still existing today, so indeed we have mingled with some.

We made the name. It comes from Deinos and Sauros. Deinos means huge/terrible and sauros means lizard. I fail to see how it connects to Atheism and how humans are supposed to mingle with them, it makes no sense.

No, it means we named their fossils and organised them taxonomically into species.
Humans name the things we see, as far as any human can reasonably assume, they had no names previously.
