So I want to hide my employment info from the people who are neither friends nor friends of friends. But I have no idea how to change this.
Basically what I want to do is change my employment history from being "public" to "friends or friends of friends".
How do I do that?

go to where you edit that information, and look for the audience selector next to it after you click on EDIT
there, you can change just that part of your timeline to any privacy setting you want
