If i'm following someone, but they are not following me, will they be able to see my updates? I guess no, but i'm new to this so.....

No they won't see your general updates but if you mention them in your tweets it will show up in their @Mentions bit. Just remember to put @ before their user name.

No they can't see your updates. But if they will try to check it in this way... http://www.twitter.com/username then they can see your updates if u didn't changed your privacy settings. Better just login go to settings n there u change your privacy settings. Done.
