If the Facebook relationship status is removed so it's no longer visible on the other persons profile but on your own profile it still says: in a relationship with .... Does that means it's just been hidden on the other persons profile or have you been dumped?

It's just been hidden unless it just says "in a relationship" which means that they've taken it off of their account. Facebook sometimes messes up and it might have been a mistake. You should just ask the other person

It could mean all those things or none, it could just be a glitch in the program. The only way to know for sure is contacting the person.
