I have a samsung galaxy note2 and I've tried several apps and downloaded several videos to my gallery. But when I try to upload them to instagram it crashes and its really annoying.

You need to have the most up to date version of Instagram as up until very recently you couldn't upload pre-recorded videos to the app but now with the latest 4.1 version you can. Try that. Hope it works out
If you're using the latest version of Instagram it definitely works. You need to select the blue camera icon at the bottom of the app. Once you're on that, select the video icon at the bottom right corner of the app. Then again select the bottom right icon which should have an image of your latest video. Selecting this should take you on to your video role and thus you can choose what video to upload.
