Specifically photos. I know the text is still there.

Yes, everything you put on the internet leaves a digital footprint behind. Even if you "Delete" it. There are still traces saved on servers. It's created as an archive and can be accessed at any time. Should you chose to reactivate your account, your pictures will still be there. It's there for legal reasons, safety reasons, and stuck in the archive.
