I know that someone has me on their "close friends" list, and that allows them to look at LITERALLY everything i do, including commenting on other peoples stuff (that they arent friends with) i dont like being "stalked", is there a way to limit this from my end?

nope - the only thing you can do to prevent it is add them to your restricted list

By adding this person to the restricted list, he won't be able to see all your posts and any of your content that isn't public. You will still both be listed as friends.
