If I were to delete my own comment on someone's instagram post, and they haven't checked their instagram during that time, will they still get a notification about that comment anyway?

if they were stalking you, and saw the comment before you deleted it, then yes.

Yup. There'll be a notification that says "___ has commented on your photo" OR it'll show the comment in the notification bar, but when they check it won't be there.
