I accidently added someone on snapchat then quickly deleted them right after. Would my request still show up under their "snapchatters who added me" or will I just disappear?

You should just dissappear from their Snapchat list. If your request to them is no longer outstanding, then they have no business to know you added them if you deleted it right after.
Or atleast it should work that way.
