How do people hide their last seens on whatsapp?
I know there's this option on the iOS version
Settings > Chat Settings > Advanced > Last Seen Timestamp (OFF/ON)
But if I (OFF) that, all it does is to not show OTHER people's "last seen" on my phone, so I don't see everyone's "last seen"
And yet when I (ON) that option I still see some people without a "last seen", but they did not block me, as I can see them "online".
How did they do that??

They didn't do anything , this facility is only for the ios version , when you on/off this facility , it takes some hours to actually process . I would tel you when you off that(i dont know how much exact hours it take)it could also take 12 hours , just leave it off for at least 12 hours and then you will see their 'last seen'.
