I was using a gift card and I'm wondering how long it will take to get the money back on the gift card

It depends on who sold it. If Amazon themselves sold it to you, you should get it back right away; however that's assuming you canceled it before the order is shipped. If the order has been shipped to you, you will have to request a return, print off their label, and ship it off. They will refund you as soon as they get it.

If it was sold to you from another seller, you will have to use the Amazon message feature to contact them. When I returned something to a seller this way, they just asked me to tell them when I shipped it off, and they refunded me about a day later.

Well, I've canceled lots of things on amazon and usually, what happens is that...

Long story short, if it just lets you cancel it the money should go back on your account. If you received an email usually, for my 5-6 cancels it'[s back on when they say it is.
