I have a business website through Intuit/Homestead. If I track visitors to my website, will it show their IP address?

Yes the IP address is one visitor stat that should always be available, some people use an intermediate proxy web site to conceal their real IP address.

Typically one would access server log file or use an add on tracker like Statcounter.com to view a record of visitor IP addresses, I don't know how your site service works.

FYI some internet connections like DSL can change their IP addresses, while others are likely to be more permanent identifications, there are IP to location lookup databases that are not as reliable as ZIP codes but generally give you an idea of the location of their internet provider location.
