I like to keep my facebook somewhat open to the public just so if people search they can get a quick idea of who I am.

However there are sometimes pictures that I wouldn't rather people see when they click 'all photos'. There not bad or anything and I dont care if I'm tagged in them...but would rather them be on the last page or something. And I don't wanna look like an a-hole for untagging them.

Is there a way I can bury single pictures or hide them or something? Or set a privacy for a single photo?

I'm pretty sure that in the privacy settings there's something that will let you block albums. I don't think you can block individual pictures. It might only work blocking them from friends and not the public but i don't know.

You can not hide just a single photo. You can block certain albums so that only your friends can see them. You might want to create a new album of pictures that you want to be made public. Then you can go to your privacy settings and set that album to where only friends or just you can see it.
