I have a google account and have had a look at GA but I need to get a good understanding of it for a job I'm going to start. I really want to have a look at some stats for a site so am I able to enter in the details of any website to get the ball rolling or do I have to have my own domain, hosting etc?

That doesn't sound like worthwhile investment of your time, there are plenty of free and paid tutorials out there. Look at the bigger picture, there is a lot to learn about how to make use of the data, including split testing and conversion optimization, you would be better studying how to use that Analytics data in advance.
