I want to post something of Facebook but there are a couple people that post on ALL my statuses so I wanted to know if there was a way that I can exclude just a couple people to a certain one post but still see the rest of my timeline.

sure, use the audience selector below where you are typing your status, and then just pick which people you dont want to see it - you can even set up custom lists

Yes you Can If you Are Making a New Post On the Bottom of the Status Box Click on the Current Setting than Click on Custom Than Click on Certain People or Lists Than Type in The People Who Can See it
If its On a Status Thats Already on Facebook Click on The Circle Than Click on Custom Than Do The Same Thing
