If I were to mute or block someone on facebook chat, does my name get removed from their chat list on the RHS of their facebook page(i.e. who is available and isn't)?

your name is removed it you mute them
blocking is something entirely different tho, that removes each of you from the others friends list entirely and you cant see what each other are doing even passively
it really doesnt matter who shows up as "available" - you can still send them a message, it still goes to their inbox whether they are online or not
