I've been told that by embedding youtube vids into some blog posts, it can help with SEO, because google displays any YouTube results first.

For this to work, would the post/article still need to contain 300-500 words or could you just put in a few works and embed a video?

Yes, google does displays the videos but if you copy the code from youtube and put it in your blog, it will drive traffic but not what you expect. Google will display youtube results first and then your blog. So your blog might not come on first page of goolge.

Yes, adding youtube video can help. You should stick to 3 keywords in your post titles and hypertext links and a good sentence description.

Adding you tube is definitely going to increase traffic for your blog posts. Yes it is true Google displays You Tube videos faster then text blogs. But if your add few keywords and 1/2 lines with description for your videos then you will get good rank according to Google's crawling.

See there is a proverb "pictures speaks more than words" embedding the youtube video is of course a beneficial to the post and helps with the SEO for sure but you've to take care of 2 things.

1. Video should be up to the point i.e showing up only the post related things in it no other matter.

2. It should not be too long video, what i mean to say is that unless required because longer the video clip will be that much time it will take to buffer and one has to wait for the video to load and you never knows what the internet speed is at end user side watching your video.

Yes there is no doubt that google displays YouTube results first and if there is a video than you still have to write some introductory kind of paragraphs for post let's say around of 100 words will do.
