I want to make my interests and pages visible to everyone on facebook.. where is the setting to change this?

You can't, they took that option away with the last "upgrade".

you can hide it through your privacy settings

Account ---> Privacy settings --> Basic Directory Information ---> View settings ---> See my interests and other Pages ---> Everyone.
Click the Preview My Profile" button
