also - does it change the way I look on their pages. I don't want to change their options in any way.

There is two categories in subscription, public and friend subscriptions. Your Facebook friends and the friends you have removed from your friend list are your friend subscriber. you can post private, select the audience using audience selector tool before posting anything.
