If I block someone on Facebook, do they know? Can they see that I've blocked them, as long as they don't try to friend me? Or if they try to view my page, what will it say...that they are blocked from my page or will it just deny access without a reason?

if you block them they will never be able to see your profile.. it would say that the page is unavailable..

No dear,
if you blocked someone then they can't do any thing.
They will not disturbed you in any single point.
You just keep enjoy . . .

If you lock some one on Facebook then they can not find you with this specific profile. If they try to find you they fail and unable to contact you. They have a another way to find you on Facebook if they build a profile in another account then it is very simple to find you.

If you want to block someone on facebook then you can follow in these steps:
→ Click options on the menu bar at top right of any Facebook page.
→ Click How do I stop someone from bothering me?
→ Enter the name or email address of the person you want to block and click Block.
If you entered a name, select the specific person you want to block from the list that appears.
People will not be notified when you block them.
