I have something extremely rare and want to see how much money I could get on ebay but not totally sure I wanna let it go.... Is it possible to put something on eBay and see if it gets any interest and then end up not selling it in the end???

no one will bid that high
so it wont sell

No. You either get an appraisal first or you compare it to similar items selling on Ebay to determine its value. Selling on Ebay is not the same as private sales. Ebay items are at liquidation prices.
