I have just followed someone on twitter and unfollowed them straight away will they know I followed them because I unfollowed straight away ??

People get notification only when you follow, mention, re-tweet them. So No, if he/she didn't check his/her followers he/she won't know that you unfollowed him/her .

There is no notification for when somebody unfollows you.
