How long does it take for it to take effect on google after changing my meta titles to 100% relevancy for my store categories and products?

It depends! You need to wait until Gooble bots crawl your site again. Could take up to 10 days from my experience

If the SE index your site daily then it could be daily. If your site is new it could take two weeks or longer.

Yes Mike is right, It depends when Google comes to your site and crawl it. You can also reduce that amount of time by submitting these pages at fetch as Google bot in Google webmasters tools.
