I was thinking of buying a hosting (iPage) which has unlimited basically everything. It says that I can have more than one domain, but can I have more than one (unlimited) wordpress websites with different domain names on it? And Google Analytics on each site? And if so, how? Thanks

In theory, yes. But you should really ask the host you're planning on using to get the correct answer.

They seems offer everything unlimited so you should be able to use multiple domains there. You can use lots of Wordpress websites but usually they will have some limitations added into their TOS (terms of services).
Also that promotion price valid only for for first term. Like if you buy for 6 months it will be 1.99 for that 6 months and after that its the regular price,
36-month term: $6.99 a month (billed $251.64 for 3 years)
24-month term: $7.99 a month (billed $191.76 for 2 years)
12-month terms: $8.99 a month (billed $107.88 for 12 months)
Yes you can have Google Analytics on each site too. Login to your Google Analytics account and the create a profile for each of your domain names. Then you can get the ID of each and added it to your blog ( you can use those Google Analytics plugins Wordpress has.)
