my mom made me a close friend on facebook, and she gets a notification from everything i say or do. is there anything i can do to disable this from my own account? she'll know if i put privacy settings on her..

No, she has to remove you as a close friend from her account. On the home page there's a list down the left-hand side. Under 'Friends' she can access the 'Close Friends' list and remove you from it there by clicking Manage List up in the top-right corner.

no, adding her to your restricted list is the only way, and as you said, she'll know if you do that
