If I deleted a contact from whatsapp can they still inbox me on whatsapp? and will the chat history still be there?..will they know ive deleted them?

There is no way you could remove anyone from WhatsApp contact, it detects the person from your phone's contact automatically. Yes, they can inbox you until you block them.
