I haven't added any friends yet but looked at a colleagues profile. It then said "You have 1 mutual friend in common". Yet I cant see how it would know this as I haven't even added my place of work yet.

It doesn't need your workplace. FB only knows that there is a person that both you and your co-worker has in common, so that person is a mutual friend. Although FB doesn't know the relationship between you, even if you know him or her.
