So it's my friends birthday today, and I wrote on her wall "happ birthday". 2 hours later, I went back to her wall and she liked everyone else's post, but I can't find mine anywhere. So I went to my activity log, and It said I posted it, but I can't see it, did she delete my post?

It might be possible that she has deleted but usually nobody does this. If she is your good or an average friend then she would not do this. It depends what kind of friend she is. Try to search one more time maybe your post exist but you could not find that.
