I want to hide my Facebook timeline from this certain person, but I want us to remain friends. Is it possible and how to do it? thanks!

I am not sure if you can do that but the only option i can think of is blocking them but seeming as you want to stay friends then probably not.

just add the person to your restricted list

No, there is no any way to hide your profile from a specific person, you have only to block him or unfriend him.
