How do you bookmark apps on facebook such as farmville, sorority life, cafe world, and happy aquarium?

on the bottom left-hand corner theres the tab named Applications.
Click on that and theres a list of all the apps that you have.
The list is separated into Recently Used, Bookmarked, and Other.
just drag the app you want to bookmark and shift it under the bookmarks heading and it will appear on the lower toolbar!

you can see on the bottom left there's applications tab
click it and it will pop up many applications that you have, to bookmark your games just drag the applications to the bookmark list
