there are a couple girls that i listed as my sisters but i don't really talk to them any more. i want to delete them off my "family" list, but i'm worried i would offend them if they got the notification.
would they receive a notification saying i deleted them out of my family?

No Facebook doesn't even tell your friends that you've added them to lists.
Lists are for your eyes only, and none of friends will know.
Unless you add them to the "restricted" list - they will tell because all your posts are now gone for them.
