The only way to disable timeline at present is to either use IE7 or set your browser to pretend it is IE7 as facebook have not made timeline compatible with that browser. if you visit a timeline page with IE7 or a browser pretending to be IE7 you will be shown the old profile style page instead of the timeline page.
There is a good article on how to go about spoofing your browser to pretend it is IE7 and hence disable the Timeline here: http://fbpurity.com/disable-facebook-timeline.htm
