I'm applying to graduate programs and have 3 interviews this month.

My Facebook profile is pretty clean, except I list my political affiliation & which candidate I'm supporting, and I have one album with me at bars and parties. My 7 other albums are clean - Costa Rica vacation, graduation, bowling, etc.

I have my privacy settings set so that only friends can see my profile, and everyone else must ask to be my friend before seeing it. However, can universities override this setting and still see my profile?

no. The only reason Universities are on the program is in the beginning facebook wanted it to be networking for STUDENTS only, a difference opposed to myspace. Now that everyone can join, it doesn't matter. Facebook owns your profile, not the university, so nobody can look. Don't be shocked if they look for your name to see if they can find your stuff, but as long as it's private/friends only, you're good.
