Is there a way to have someone as a friend on your facebook but make it so they can't see all the things on your wall?
also can you set up you profile so that people who aren't your friends can see your wall and what everyone else puts on it but they can't see what you post?

you can add people to your restricted list, but that's about as close as it gets

Okay I'll be nice on this one
it's easier to do on the computer cause I've had to do it 
1. Go to privacy settings
2. Control Default Privacy, change it to custom and out the person who you want to block.
It will stop them viewing your wall/timeline, all photos of you and your albumd,status updates, posts you've been tagged in
Other custom blocking a are 'How you Connect' 'Sharing On Facebook' 'Timeline and Tagging'
You can custom them, friends them, or friends or friends them (options)
Play around with it and you'll get the hang of it
But 'Control Default Privacy' hold everything so if you do default privacy there is no use doing the others, but you can to be safe.
People have still go to your timeline and see recent activity of an app on Facebook and that, if you updated your cover or profile, that will be there.
But they can't view anything at all. If they try loading up your history it will open with 'No stories available'
