I don't want people to be able to look at my photo albums when they look me up on facebook. How do I change that?

Facebook has no photo privacy. Privacy depends on your profiles privacy. So, I usually avoid facebook and join http://www.onnation.tk/
It really better than all social site.

Open your profile
Click the photos tab on the left
Select any album you want to make it private
Click edit album
Chose the privacy (to friends or only you or public)
This can be done to all individual folders.

When you want to do that to your profile picture
Click on profile pic album
You can find no edit album now
So choose the album link near your name, it looks like by*your name* (albums) click on this album..
Now all the albums will be displayed with the option to chose their privacy below.

You can change that now as you like..

Do you mean as in strangers or to friends ? You can go on your profile & go to all albums . and then there's a setting for each album .

if you dont want people to see your photos then why did you post them online?
