I've seen on the profiles of others who have timeline that they've hidden the bar that appears at the top right that has links to previous years posts. Such as "2009/2008 ...etc". How do you hide it?

they didnt hide it - those are people who recently created new account - check their sign up date to be sure

You can't hide it, maybe they deleted all the content from their crazy partying times, so that future employers don't have the cookie crumbs of their past

This is a new timeline officially launched by facebook, few months ago. You can't change that now. Facebook offers the trial period after the activation of new timeline on your account. Till now, you only experience the new features but not your friends who till not get this.
even my public profile is changed now.
