Facebook privacy settings are different for everything you post to Facebook including: personal information, videos, photographs, and status updates; some of the default privacy settings for posts are set to “everyone” making it necessary for users’ to understand how to control the settings to ensure that their Facebook posts are at the users’ desired level of privacy.
HELP SOLVE THIS PROBLEM STATEMENT

Facebook is NOT interested at all with you hiding everything. In fact, they changed the privacy settings so it would confused all those people who are not computer savvy so their information is visible to anyone. If everything is private then basically it's not social interaction anymore but more like "private emails with pictures attached".
If you want that kind of service (everything private) then use Windows Live Messenger Profile.
