Will facebook alert him that you hid it?? and if he goes to your timeline will he notice that its not there?

he will not be notified, no, but he might notice it's not there...

I personally think that the person wont be notified but would only come to know about it when he checks your timeline.

Yes he will see that it has been removed, but he wont be notified.
