Does this make it so they can't see how many friends you have?

Yes, go to your profile page and click friends and then edit and select "Only me" to see your friends. To make sure you did it, go back to your profile page and click activity log and view as then you can type a random friends name in to see how they view your profile. The link to your friends should be gone. Hope this helps!
