"Hide" hides it so people can't see it, "Delete" permanently removes it.

"Hide" just hide post nobody can't see but "Delete" it delete from Facebook.

Deleting a post means it's gone forever. Hiding it on your timeline means that nobody else can see it. However, if you click 'activity log' you should still be able to see anything you have hidden, or posts from applications whose activity you don't allow to be shown on your timeline.

If it's hidden then it's removed form timeline, but they are still there for you to see and unhide it if you decide you want it back. If you delete it then it's gone for good

Hide - no one but you could see it
Delete - no one including you can see it
