(Meaning, I go into the drop-down "Account" menu on top of the page, choose "Privacy Settings," then click on "customize settings." The first thing listed is "posts by me," and my default is "friends only, except..." Several friends are listed. If I add someone to this list, in order to prevent them from seeing my status updates, will they be able to see my old updates? Or will those disappear as well?)

They will dissapear. So he/she won't see your old.
