do you see the photos they like, or just the stuff they share? have they changed their privacy settings?

You can see everything they do and everything they do concerning mutual friends ( friends you both have in common ) . You can see the photos they like and share; there isn't a way on facebook to make what you like private- BUT you can change the audience for everything else- posts, shared and added photos. Its the little icon that has the friends symbol on it.

You Can See Any Activity From your Friends on Facebook You See more than What you had Mentioned you Can Also See Status Updates Photos that they have Posted Not Just the Ones that they Had Liked Game Updates
