So let's say i changed my relationship statues and then it would say on my profile "_____ is now in a relationship with______" can i hide this from a single person or would it be hidden for everyone?

you can hide it from one person if you select "custom"

You can only hide it from everyone, not a single person. You do this by setting it to 'Private'. Good luck!
