Does friends of friends mean that even thought we are not friends as long as we have mutual friends you can see my information?

yes, it does.
if you choose frineds only, then only your friends can see it [dur]
if you choose friends of friends, then your friends' friends can see, even if you aren't friends,
and then maybe their friends could see :/
it gets very complicated.
