Basically my boyfriend's mom made a fake account on facebook and friended me and stalked everything i had said in the last month and found a tiny reference to my father being in prison. She now calls me a lying controling bitch for not telling her that.
To clarify i am 19, a college student and my boyfriend is 25 and also a college student.
I told my bf i love him and do not care what kind of crazy his mom is.

it seems like his mom is in the wrong. That's not good to even "spy" like that in the first place. Tell her off!

Second of all, as far as I'm concerned you had the correct response. Don't let her interference sabotage your relationship. Just ignore her. She sounds completely psycho.
