If I use a different name and turn on all my privacy settings on Facebook, and if I don't tweet my name on Twitter, will colleges still be able to find information about me from
social networking sites like those.

As long as you don't go to them on their computers and no one references your accounts and your name on the one page or document, then you should be fine.

If you want to take it a step further, you could use a proxy, but that's unnecessary. However, if you do decide to go that route, you can learn more about proxies at http://proxy80.info/.
