When you subscribe to a page or person, it means that you can see all their status updates and what not. They wont stalk you most likely unless its a friend of yours you subscribe to, but its mostly pretty simple you just see status updates.

Subscribers is a lot like twitter followers, except with facebook subscribers you can pick and choose which posts are public for your subscribers to see. They can see your photos and comment and like your status's but only the ones you make visible to the public. I personally choose not to allow subscribers because I'm in recovery and I don't want the whole world to see whats what's going on in my life. I do have a twitter tho, and ppl can see what I post on that if I allow them to follow me. Just make sure to manage your privacy settings.
